Many Charms of Canada, Including Poutine, Beckon

"Oh, Canada"–how I long to return. Your cities–Toronto, Vancouver, Montreal, Calgary–are magnificent, topped by the charms, hospitality and beauty of Quebec City.
But what really got me thinking of a Canadian trek again was a segment on Fine Living Network’s Best Of… series featuring poutine, Canadian french fries topped with cheese curds and smothered in brown gravy.
Pictured are, top, a helping of poutine, and underneath, the reportedly original-flavor poutine from la Banquaise.
I can’t believe I’ve never tried these things in all my visits to Canada!
Now, the question is: Do I dare try to make these at home from a recipe, or from my imagination.
Actually, the Best Of… feature, I believe, showed the cheese going underneath the fries and the gravy on top.
I guess there are several variations. Stay tuned for mine! LOL
