Oops: Soy Sauce and Rice Don’t Mix

One of the gaucheries in food life, at least from an Asian perspective, is to put soy sauce over steamed rice (or any type of rice), but that’s exactly what I saw happen today on a soy sauce taste test on America’s Test Kitchen.
Even though soy sauce is basically a cooking ingredient much like worcestershire sauce, it is used with wasabi on sushi, but only on the fish side, not the rice side.
That got me to thinking about how one could actually conduct a soy sauce blind tasting without resorting to rice. I’m not sure I have an answer unless, like wine, you just swirl the stuff in your mouth and feel and taste it in all its various sensations and flavor variations.
Is the world ready for that?
I say you just have to cook with the stuff until you find one you prefer. Either that, or just smell it and dabble some on your finger for tasting.
