Cast Iron Cooking

I caught an "Iron Chef" rerun last night (in which the competitor got stiffed again) and heard the all-knowing [tag]Alton Brown[/tag] remark that the best cooking comes from cast iron kitchenware.
That reminded that I had purchased a bunch of cast iron cooking vessels from Big Lots (I’m not sure if they have Big Lots where you live, but it’s basically a remainders’ type of store). So I unpacked the individual cast iron skillets (good for one serving) that I had purchased and threw together a hasty frittata.
Result? Alton Brown was right. It was the tenderest, tastiest fritatta I’ve ever concocted.
Now for more experimentation….
